Buffalo Chicken Wings

Ingredients:

  • Chicken Wings – 800 gms
  • Oil – 100 ml
  • Salt – 10 gms
  • Cayenne pepper – 5 gms
  • Black pepper powder – 3 gms
  • Tabasco – 15 ml
  • Cider vinegar – 30 ml
  • Butter 50 gms
  • Celery sticks 50 gms

Method:

Cut off wing tips and reserve stock. Cut the wings at the joint. Now deep fry in oil heated to 375 degrees. Blend the melted butter, tabasco and vinegar, and brush on the fried wings. Serve with celery sticks and blue cheese dressing. It makes some 20 to 25 pieces.

For Blue Cheese Dressing

Ingredients:

  • Sour Cream
  • Mayonnaise
  • Milk (for thinning the consistency)

Method: With a fork, coarsely crumble the cheese. Combine with sour cream and mayonnaise. Add milk to thin mixture to a dipping consistency.
