- 60 g iceberg lettuce
- 100 g cucumber
- 15 g each red, green and yellow bell peppers
- 20 g onions
- 30 g low fat feta cheese
- 3-4 black olives for garnish
- 1 teaspoon mustard
- 1 teaspoon olive oil
- ½ tablespoon oregano,
- 1 cup chopped fresh thyme and parsley
- ½ teaspoon ground black pepper
- Salt to taste
- Chill all vegetables, olives and cheese.
- Mix all dressing ingredients.
- When ready to serve, toss all vegetables and olives.
- Top with cheese and serve with dressing.
