Greek Salad

Ingredients:

  • 60 g iceberg lettuce
  • 100 g cucumber
  • 15 g each red, green and yellow bell peppers
  • 20 g onions
  • 30 g low fat feta cheese
  • 3-4 black olives for garnish

Dressing:

  • 1 teaspoon mustard
  • 1 teaspoon olive oil
  • ½ tablespoon oregano,
  • 1 cup chopped fresh thyme and parsley
  • ½ teaspoon ground black pepper
  • Salt to taste

Method:

  1. Chill all vegetables, olives and cheese.
  2. Mix all dressing ingredients.
  3. When ready to serve, toss all vegetables and olives.
  4. Top with cheese and serve with dressing.
