MANGO PASSION MOUSSE

Mango passion mousse with berry & mango jelly Recipe:

Ingredients:

  • Egg yolk- 2
  • Sugar – 25gm
  • Water – 1.2ml
  • Whipped cream – 40gm
  • Mascarpone cheese – 10gm
  • Gelatin – 8gm
  • Mango puree – 10ml
  • Passion fruit puree – 10ml
  • Vanilla essence – 1ml

Method:

Beat egg yolk in a mixer. Now, combine water and sugar and cook till it turns into the soft ball stage. Now, add this sugar into the egg yolks and whisk continuously until it cools down. Melt gelatin and add in the egg yolk mixture. Mix whipped cream, mascarpone cheese, mango and passion fruit puree. Pour this mixture into moulds. Set in fridge. When set, demould it spray with yellow cocoa butter. Garnish with jelly.

MANGO PASSION MOUSSE

FOR Jelly:

  • Water – 200ml
  • Glucose – 40gm
  • Gelatin – 18gm
  • Sugar – 60gm
  • Mango puree – 40gm
  • Strawberry puree – 40gm

Method:

Boil water sugar and glucose. Now, add gelatin and mix it. Add mango puree and set in trays. Refrigerate for an hour.
