Spinach With Warm Mushroom

Ingredients:

  1. 100 g spinach
  2. 100 g fresh mushrooms
  3. 50 g tomato concasse
  4. 15 ml olive oil
  5. 1 cup chopped fresh thyme and parsley
  6. ½ teaspoon ground black pepper
  7. Salt to taste

Methods:

  • Blanch the spinach and chill it.
  • Saute the mushrooms in olive oil. Add tomato concasse.
  • Season with salt and pepper.
  • Pour the warm sauce with mushrooms over the chilled spinach.
  • Sprinkle the herbs and serve.
